2 Questions
Why do you recommend to avoid ultra pasteurized milk?
Thanks

Ultra-pasteurized Milk (UP) or ultra-high temperature treatment (UHT), is heated to 275 degrees F or higher for about one second. UHT milk is actually cooked, and is therefore unsuitable for culturing.

When you use your culture can you use the yogurt you make to start the next batch?

Yes, you can use pre-made yogurt to start the next batch of yogurt. If after a few batches you notice some odd flavors or it is not culturing quite as quickly then either some outside bacteria has been introduced to the yogurt or the strain has weakened. This is when you should start with a fresh yogurt culture starter.
