Cheese wax is a simple, reliable way to protect your homemade cheese during aging. It seals in moisture, prevents mold growth, and keeps each wheel aging evenly. A 1 lb. brick coats about 12–20 cheeses when brushed on. If you prefer dipping, plan on using a 5 lb. block for full coverage. This wax stays pliable instead of turning brittle, so it holds up well during long aging periods. Store it in a cool place, away from high heat, and it will keep indefinitely.
Cheese wax also has a second job on the homestead. When melted and cooled on poultry, it helps remove fine down feathers quickly and cleanly—simply dip the bird into the warm wax, chill it in cold water, then peel the wax away.
